Iberico is made from a blend of pasteurized cow, sheep, and goat's milk. The cow's milk gives the cheese its flavour and acidity, the higher fat sheep's milk provides the rich and buttery consistency, while the goat's milk adds a slight tartness.
Pair with Pinot Noir or a Sauvingnon Blanc.
