So tasty!

I bought this cheese only because I was given a girolle a few years ago but couldn't find Tête de Moines in my small town. I couldn't be more thrilled that the cheese that goes with it is truly delicious. I used both on the Christmas dinner appetizer table and everyone loved it. And, not to worry...I've also been eating it just by the slice and it's almost as good (the girolle definitely adds something, though). This cheese is so lovely -- mild enough for people who are "scared" of stinky cheese but still smelly enough for those of us that love the funk. You'll be my source from now on!

Tasting Notes:

The cylindrical shaped Tête de Moine Cheese, which means "monk's head", has been produced in Switzerland for more than 8 centuries.

This unique cheese is traditionally shaved into thin, rosette shaped slices rather than being sliced by hand with a knife. Shaving the cheese in this fashion allows its flavours to fully develop.

A special knife called a "Girolle" is used to simply shave the cheese from the top, thin layer by thin layer.

The delicate cheese rosettes that result melt in your mouth. The texture is dense, with an intense, fruity, sweet flavour.

Available in whole or half wheels.

Pair with a Beaujolais.
