Owning a "girolle" to finely grate the cheese into beautiful carnation like fleurets is a must. Super cheese at it's prime and impressed my guests. Thank you Vitali.

Not what I expected

I ordered four items recently. While three were fine, one foie gras pack was a major disappointment. I received it on December 19th with an expiration date of December 27th. Technically it wasn't expired, but with only an 8-day window, it was useless as a gift.
I added foie gras to my cheese order because of a 'Buy 2' promo that explicitly stated your products have a long shelf life and are suitable for buying in advance. However, the promo disappeared from my cart during checkout, and my attempts to reach support via chat went unanswered. The foie gras I received definitely didn't meet the 'long shelf life' promise. Overall, the experience was not what I expected.

Tasting Notes:

The cylindrical shaped Tête de Moine Cheese, which means "monk's head", has been produced in Switzerland for more than 8 centuries.

This unique cheese is traditionally shaved into thin, rosette shaped slices rather than being sliced by hand with a knife. Shaving the cheese in this fashion allows its flavours to fully develop.

A special knife called a "Girolle" is used to simply shave the cheese from the top, thin layer by thin layer.

The delicate cheese rosettes that result melt in your mouth. The texture is dense, with an intense, fruity, sweet flavour.

Available in whole or half wheels.

Pair with a Beaujolais.
