Rougette is a creamy, soft cheese made by Käserei Champignon, Lauben / Allgäu, Germany. It is considered a triple cream due to the addition of extra cream at it’s beginning stages.  The flavours are light, buttery with hints of citrus and hazelnut.  Underneath the bloomy white rind typical to a brie style cheese, a red layer peaks through. Washed in brine consisting of paprika extract, amongst other secret ingredients, 5 times over the course of it’s aging to produce the beautiful exterior.
