My request was simple, but demanding: Come up with four appetizing Canadian cheeses that were not 'polite'. The cheeses were served about 10 days after delivery, alongside a wine-tasting for 5 people: A 2011 unoaked Canadian chardonnay, two Pomerols (one past its best, but drinkable; one in optimal condition) and finally a Monbazillac. The pack arrived in great condition and all the contents went straight into a relatively cool part of my refrigerator. On the day of the wine-tasting I brought the cheeses up to room temperature in two stages, to avoid shocking the cheese. It was uncovered and at room temperature for an hour before serving, accompanied by plain bread and crackers.

Bete a Seguin: This was very fine. The cheese was in excellent condition, ripe and ready to find its own way off the cheeseboard and yet still with enough form to hold its shape. The taste delivered brie-like creaminess as well as the advertised fungal quality, but with a hint of acidity. It paired well with both the chardonnay and the milder Pomerol. It didn't have the taste profile to stand up to the more robust vintage, but that would have been an unreasonable expectation.

Compton au Poivre: This was the least successful of the four. The cheese is an unpleasant dark cream colour, like set dulce de leche. The texture is somewhat rubbery and the mouthfeel is unappealing. The taste is quite strong and smoky, slightly bitter or chemical. As though the cheese has been laced with cleaning agent. The peppercorns provide contrast, though with the subtlety of a gastronomic sledgehammer, flooding one's mouth with fierce and unwelcome pepper as though deflecting from the cheese itself.

Samuel le Bleu. What a great cheese. It was in excellent condition, slightly weepy with liquid. It crumbled into the mouth. The otherwise accurate written description misses the delicious salty component. The complex flavours ebb and flow, almost like the visual marbling. It was an excellent companion to all the wines, including in spectacular fashion the Monbazillac (traditionally associated with Roquefort). In fact, Roquefort seems rather 2-dimensional after tasting this cheese.

Canotier. Notwithstanding its impressive heritage, this cheese is not very interesting. It is generally waxy in texture, but with a pleasant crumb. It has a adequately strong flavour, but the single, unvarying note meant that few of us went back to it for a second helping. It will probably end up in a grilled cheese dish, with some mustard and grilled vegetables to add some range of flavour.

So glad you had a sampler focused on Canadian cheese! It included a really nice selection from Quebec, Nfld and a big prize winner (Five Brothers) from Ontario. Love to see more Canadian options - really interested in tasting more Canadian cheese.
