Produced by one of the best-known Provolone makers, this family business has been making cheese since 1877.
A similar manufacturing process as Mozzarella is used, in which the cheese curds are stretched into a taffy-like consistency. Unlike Mozzarella, however, which is sold fresh, Provolone is molded into a pear-like shape, tied with rope, then hung and cave aged for at least 3 months.
The aging process gives this cheese a delightful sharpness, with a distinctive spicy flavour, and a hard texture.
