Traditionally aged Pecorino cheese is rubbed with a mixture of black ash and olive oil to create the uniquely black rind. This cheese features a very nutty, slightly sharp, rustic flavour of fresh grass and herbs. The texture is hard, but with a very deep richness and creaminess.
Pecorino Renero is savoury and delicious, and digests well as it is made from sheep's milk. Sheep's milk is suitable for lactose intolerant cheese lovers, in most cases.
