One of the oldest blue-veined cheese, Gorgonzola, named for its region of origin, is still made the traditional way.

It is given its distinctive blue/green veining during the aging process, when air channels are created by inserting and removing metal rods. This allows the mold to develop.

It is a soft cheese, with a creamy, crumbly texture. It also features a sharp yet sweet flavour, with hints of nuts.

Try drizzled with honey and paired with pears or apples.
