Frère Jaques Cheese

The Facts

Country: Canada
Milk Pasteurized cow
Age: 3-6 Months

Tasting Notes:

Made by the only cheese dairy in North America run by Benedictine Monks, at the Abbaye De St-Benoît-Du-Lac, Frère Jaques Cheese, from Quebec, is a delicate variety, steeped in history.

This firm cheese, made from pasteurized milk, is a delicious Swiss-style cheese, with a delightful texture and an interior scattered with holes (or eyes) throughout.

The texture is smooth and soft, yet slightly elastic. And its washed rind is a lovely warm orange-yellow colour, which looks so nice on a cheese board!

It's aroma is sweet, but slightly acidic, with a delicate walnut flavour. It's a nice mild cheese, that will appeal to a wide audience. Also great for melting. Grilled cheese anyone?
