Tasting Notes:

Made by the monks at Benedictine Abbey in Saint-Benoit-du-Lac, Quebec, Canada, the only monk operated cheese farmhouse in North America. The texture is firm and crumbly sort of like an English stilton but with a bit of a creaminess at the same time. Medium sharpness, salty and earthy in the finish.
