Made in Tuscany, this delicious Pecorino Brillo is made the traditional way. After maturing for a minimum of 6 months, the cheese is washed, dried, and placed in terracotta pitchers. The pitcher contains a mixture of Tuscan wine, and is aged for several more months.

The maturation process requires constant, daily care to ensure the proper absorption of the wine. It is this procedure that causes the Pecorino to develop a sweeter, more delicate flavour, a softer texture, and the lovely fragrance of wine.
