Made by the only cheese dairy in North America run by Benedictine Monks, at the Abbaye De St-Benoît-Du-Lac.


A semi-firm texture, very smooth and pasty, similar texture to that of a Jarlberg or Swiss. The flavours are mild to medium, sweet, nutty and smoky due to it being duh! - smoked, over hardwood. Not heavy on the smoke flavour, but just enough to keep it balanced.
