Tomme Vaudoise is a luscious, soft-ripened cheese from the Vaud region of Switzerland. Made from whole cow’s milk, it develops a supple, edible bloomy rind that encases a rich, velvety interior. When young, it’s smooth and creamy with a fresh, milky flavour; as it ripens, the paste becomes runny and the aroma intensifies, offering savoury notes of mushrooms, cream, and fresh hay.
