Named after the port of Mahón on the island of Minorca off the Mediterranean coast of Spain. The Mahon Cheese is firm, but not too dry and still has a creaminess to it. Its flavours are light, buttery, with a fruity and slightly salty finish. The sea salt content in the grass the cows eat tends to give it more saltiness during certain times of the year. The rind is a beautiful orange colour, from the mixture of oil and paprika that is rubbed on the cheese as it ages.
