Langres is a cow’s milk cheese made in the region of the Champagne Ardenne, France. It is creamy and slightly chalky in the middle and gets runnier as it ages. Not an overly strong cheese, but it does have character and a slight aroma. Not as 'stinky' as an Epoisses but does have some similar tones.
A little dent in the top of the cheese is the perfect vehicle for a splash of Champagne if you want to kick things up. Just let it soak in at room temperature before you dig in.
