Côte d'Or is a soft, washed rind cheese from France. Sort of a cross between a slightly more favourful washed cheese like Langres or Epoisses and a soft triple creme like Chaource or Brillat Savarin.
A very balanced, delicate soft cheese that is very easy to eat.
Mellow enough for white wines or sparklings but can also be paired with a lighter, fruitier red.
