Mild and smooth

The lovely buttery texture and delicate flavour profile is delicious. Mild grassy notes combined with hints of nuttiness and a pleasant mineral essence on the finish. The cylinder shape looks nice on a board and sliced well for ease of service. I did a star slice for guests to access a wedge. Horizontal slices for round discs can be done as well. Both ways maintain the cylinder presentation for the board. My only criticism is an imbalance of aroma and flavour profile. Not really troublesome, only surprising as the vibrant aroma might lead one to expect a strong palate too. I enjoyed it overall

Tasting Notes:

Chabichou du Poitou Cheese is an artisanal AOC Protected cheese made from whole fresh goat's milk, and comes in the shape of a cylinder.

The edible bloomy rind develops its characteristic wrinkly appearance as it ages, with some gray patches.

Its creamy bright white interior has a semi-soft, dense, velvety texture, with slightly salty, savory, sweet, tangy flavours. 

***All handmade goat cheeses may arrive with little spores of mold, this is completely edible and normal for artisan goat cheeses. 

Pair with Sauvignon Blanc, Chardonnay.
