Its thin, bloomy rind reveals a dense yet creamy paste with a fresh, lactic tang and subtle herbal notes from the rosemary. The flavour evolves with age — starting bright and citrusy, then deepening into more savoury, nutty tones.

Pairing Notes:
Serve Bouyguette with crisp white wines such as Sauvignon Blanc or a light, floral rosé. Its herbal touch also makes it a perfect partner for rustic bread, olives, or a drizzle of honey.
