Raclette de Compton au Poivre

We did not like this cheese. It has a very strong odour and we wouldn’t order it again.

Interesting to try

Mixed ratings from my diners. Tasty medium strong cheese but the aroma was not appreciated by all. It did not make my favourites list unfortunately.

Definitely for an educated palate

There have only been two cheeses in my life I can say were repugnant, and this was one. Foul-smelling, like mouldy pepper on the tongue, and actually gag-inducing. But I'm sure others might find it magnificent.

Raclette de Compton au Poivre Cheese

Raclette de Compton au Poivre is a premium organic cow’s milk cheese from Québec’s renowned Fromagerie La Station de Compton. While traditionally known as a raclette-style cheese, this version stands out as an exceptional table cheese, offering a rich, buttery texture and a beautifully balanced flavour profile.

Aged to perfection, the paste is smooth and supple with nutty, savoury notes, while a line of cracked peppercorns through the centre adds a gentle warmth and aromatic spice without overpowering the cheese. The result is a versatile cheese that is just as enjoyable served on a cheese board as it is melted.

Enjoy it sliced on its own, paired with charcuterie, or as part of a composed cheese plate. It also melts beautifully, making it ideal for raclette, grilled sandwiches, and comforting dishes—but its true strength lies in its ability to do both.

Crafted on the farm using milk from the producer’s own herd, this cheese reflects the terroir of Québec’s Eastern Townships and the quality of one of Canada’s top artisanal cheesemakers.

Perfect for:

  • Cheese boards and entertaining

  • Everyday table cheese

  • Raclette and melting applications

  • Gourmet sandwiches and cooking

Tasting Notes:

Buttery · Nutty · Creamy · Subtle peppery finish

Pairing Suggestions:

  • Chardonnay or Sauvignon Blanc

  • Pinot Noir or Gamay

  • Dry cider or farmhouse ale

  • Charcuterie, pickles, and fresh bread
