Roquefort Carles – AOC

A historic blue cheese from France’s limestone caves.

Roquefort Carles is one of the few traditional producers still using hand-ladled ewe’s milk and natural aging in the caves of Roquefort-sur-Soulzon. AOC-certified, this blue is as authentic as they come—strong, salty, and complex.

Tasting Notes:

Expect bold and tangy flavors with sweet cream, pepper, and sharp blue veining. The texture is creamy yet crumbly.

Pairing Notes:

Best with Sauternes, sweet sherry, or ripe pears and crusty bread. Try it on a steak or melted into sauces.
