Interesting sharp cheese

This was fun to try but not special. Did not wow us for taste and was hard to slice for serving.

Tasting Notes:

Part of the Gouda family yet after the first bite, you realize this isn’t your ordinary Gouda. Picobello Cheese is a Dutch cheese with an Italian twist. Sweet, caramel flavours of traditional aged Gouda and nutty, salty crystallization you would find in a good aged Reggiano.

There is so much character in this cheese, it appeals to nearly all cheese lovers. Under the thick layer of wax, reveals a wonderful yellow/orange paste. Firm but not overly dry like 3 or 4 year old Goudas, it can be dug into with a butter knife. The complex, nutty flavour of roasted nuts and brown butter is a rich and savoury experience.

Pair with a Pinot Noir.
