I'm not a chef but I know good food when I taste it. When I went to an Italian importer, I asked for quality truffles but they don't have the whole truffles. The lady offered Gigi Truffle Carpaccio. I'm quite reluctant if people offered me an alternative to what I really want. You know most people will push for something that doesn't sell so they can get rid of their stock. However, the lady gave me La Campofilone Tagliatelle pasta as an alternative which I approve of so I decided to give it a try. Carpaccio's are meant to be eaten as an appetizer but since I wanted to use it for my pasta, I just topped my pasta with the carpaccio and it's oil with a good parmiggiano-reggiano and freshly ground pepper and it did a good job. I don't have to pay $$$ in restaurants to get a good quality meal. Some of which I know would only give you low quality truffles.

I returned to the Italian importer and this time then have the whole black truffles also by Gigi. I'll use them for my birthday meals next week. All of these happened in Nov 2015.

I've been all over Europe (including Italy), Asia and I'm from North America. Always eating where the locals hang out.

Gigi Truffle Carpaccio

The Gigi Truffle Carpaccio is black summer truffle shavings, preserved with olive oil and salt. 

A few shavings on top of your dish will add tons of earthy truffle flavour. Topped off with oil, this will keep for a while in the fridge. We like to add it to fancy omelets, pasta dishes, risotto, and more.  

Made in Italy.
