Aged for approximately 12 months, this Pecorino cheese is made in small batches by Il Fortetto, a famous cheese maker in the region. It has a slightly dry, hard texture, similar to that of Parmesan. It is beautifully nutty, with a tangy finish—making it a perfect antipasto cheese. Also makes a great a dessert cheese, pair with fresh pears, fig jam, or a drizzle of honey.
