Tasting Notes:

An unpasteurized, washed rind, brie style cheese made with pure Island milk in Isle-aux-Grues, Quebec. The salt from the water creates a rich soil for the cows to eat, which produces a beautifully deep flavoured cheese. The washed copper coloured rind has a rustic tang to it, and is a perfect balance to the rich, creamy, buttery interior. 

Let it sit at room temperature before eating to bring out all of the flavour.
