Tasting Notes:

This pure sheep's milk cheese has an interesting aging process, which is still followed the ancient, traditional way. 

With the need for farmers to keep the cheese all year round, this Pecorino was placed in pits, approximately 3 meters wide and 2 meters deep. The cheese is placed in canvas bags in mid-August, and buried there until mid-November.

When the cheese is pulled out from the pit, the fermentation process has changed both the shape and flavour. 

This unique hard cheese has an intense, piquant flavour.
