Tasting Notes:

The Adarga de Oro Cheese is a hard, slightly dry cheese produced by the same farmhouse that produces the famous 'Manchego'. It is made from a mixture of 3 milks, thus is very complex in flavour. As it ages, the cheese is rubbed with olive oil which not only protects the cheese, but adds a layer of richness. Nutty, earthy, grassy, and piquant in the finish, expect flavours of a cheese made from 3 different milk types.
