From the Haute Savoie region of France in the Rhône-Alps comes Tomme d'Abondance Cheese.

This cheese dates back to the 12th century, when monks of the area worked to not only set up production for the cheese, but to also bring it to a larger audience. By the 14th century, it had grown in popularity throughout Europe, and was even being enjoyed by the Papal enclave in Avignon.

Abondance is made from the unpasteurized milk of local cows, near the border of France and Switzerland. This special cheese enjoys a PDO designation, and can only be made according to traditional methods within the specified geographical area.

The cheese has a firm, but creamy and smooth texture, and a strong, nutty aroma. Flavours of hazelnut, fruit, and butter come together perfectly, along with subtle floral notes and a nice acidity. A lingering aftertaste completes the experience.
