The Adarga de Oro Cheese is a hard, slightly dry cheese produced by the same farmhouse that produces the famous 'Manchego'. As it ages, the cheese is rubbed with olive oil which not only protects the cheese, but adds a layer of richness. Nutty, earthy, grassy, and piquant in the finish.
