Switzerland has been famous for its quality cheese and cheese makers. The first record of cheese makers in Switzerland goes back to the Roman historian Pliny the Elder. He called what is now known as Swiss Cheese “Caseus Helveticus”, which translated to “cheese of the Helvetians”. The Helvetians were a tribe that lived in Switzerland at the time. For centuries, however, cheese was soft, the standard being cottage cheese. However, in Switzerland in the 15th century, the discovery that the lining of calves’ stomachs’, a substance called rennet, could be used to harden cheese was made. Appenzeller is a classic example of a fine Swiss cheese. This type of cheese is made from the milk of cows who live high in the Alps. These cows eat nothing but herbs and hay and produce a milk that is valued for its rich flavor. Once the cheese has hardened in the mold, it is treated with a brine called sulz, a mixture of herbs whose recipe is a closely guarded secret. Gruyere is a type of Swiss cheese made from cow's milk that is named after the town of Gruyeres in Switzerland. While there is also a type of Gruyere made in France, the Swiss kind does not have any holes, whereas French Gruyere does. Gruyere is known for its smooth, mild flavor that is particularly good for use in fondues. Gruyere Etivaz is type of Gruyere made from raw cow's milk named for the hamlet of L'Etivaz in the Swiss Alps where the cheese is made. It is cave aged for between five and thirteen months and is still made in the traditional way, in traditional copper cauldrons and cooked over open wood fires.
