It is made in both Greece and neighboring Cyprus. Kefalotyri's hard texture makes it perfect for grating over pasta dishes or frying in olive oil to make the classic Greek dish saganaki. You can find young kefalotyri that has been aged for two or three months. Aged kefalotyri is typically aged for a year or more and has a much drier and stronger flavor than younger cheeses. Similar to kefalotyr is the Greek cheese kefalograviera. Kefalograviera is made from sheep milk and has a rich, salty flavor with a bold aroma. Some softer Greek cheeses include kasseri and manouri. Kasseri is made from unpasteurized sheep milk. Sometimes a little goat's milk will be mixed in for flavor. It has a texture similar to provolone and is pale yellow in color. Kasseri is typically aged for four months in order to obtain its characteristic flavor.
